The Good Cook Techniques and Recipes Series by Time Life

The Good Cook series starting in 1978 through the 80s, was published and sold through mail order subscription.  Subscribers would recieve a new cookbook every other month, starting with the Vegetables cookbook. 

The  series was first published in London for the European market.  Soon after each cookbook was published, a revised version was published for the North American market, with this series titled “The Good Cook Techniques and Recipes”.  Each version of the series was edited by separate teams of Time Life Editors Along with Chief consultant cookbook author, Richard Olney, who  oversaw the perduction, editing and the contributions of text and recipes, of both versions.

Each cookbook, with it’s own theme; Lamb, Fruits, Preserving, Pork, Sauces, Wine and so on, has two parts;  the first part, a teaching part, with detailed instructions and photos showing step-by-step methods guiding your success to the second part, an anthology of previously published recipes by well (and not so well) known authurs.  For the readers preference , both Versions of the series, are published with measurements in Metric and Imperial. 

 

It is said, that to elude the previously published recipe restriction, the Petits, Propos Culinaires Journal was started, with Olney publishing recipes under the pseudonym, Nathan d’Aulnay.

“In 1979, a remarkable culinary congress took place at Richard Olney’s kitchen table in London, where he was entertaining Alan and Jane Davidson. Stumped by an edict from his publishers at Time-Life, Olney was looking for an outlet to print a few recipes for later inclusion in his “Good Cook” series. The idea of a Journal took shape, and with the help of Elizabeth David, a remarkable venture began. Sixty-seven issues later, Petits Propos Culinaires is… ” The Wilder Shores of Gastronomy: Twenty Years of the Best Food Writing from the Journal Petits Propos Culinaires by Authors Alan Davidson () and Helen Saberi.

Time Life International published the Good Cook series for use in Europe, in Amsterdam with only 27 titles (has “Techniques and Recipes” printed on spine, but, not on the title page).  The hardback boards and spines are wrapped in paper, unlike  the cloth bound American series.
Many of the book titles were the same in both series with some exceptions, the Biscuits, Cakes & Pastries, Confectionery,  Desserts,  Offal, Patisserie,  Salads and cold Hors-d’Oeuvre, Snacks and Canapes, Shellfish,  Grains, Pasta and Pulses , along with the Game cookbook, are the unique titles and the content  , make the version sought-after by those Chefs that want the European focus.

The series “The Good Cook Techniques and Recipes” was published by Time Life Books, in Alexandria, Virginia, US, for use in the homes of North America.  The content was revised from the European series, with most of the cookbook titles the same or changed a little for the American series.  Two of the cookbooks were split into two cookbooks, with revised and additional content.  The “Fish and Shellfish” cookbook became the “Fish” and the “Shellfish” cookbooks.  The “Grains, Pasta and Pulses” cookbook  became the “Dryed Beans and Grains” and the “Pasta” cookbooks.  The Game cookbook was dropped from the American series.  all of the changes, gave the American series a total of 28 cookbooks.

The Good Cook 1981. 

Most American series were published with cloth spines and back boards, with a Pictorial paper wrapped front board with premium paper inside.

Hard to find today, a  series with all cloth boards with a pictorial front cover and reinforced bindings, for Schools and library’s published by Silver Burdett.  books state Publisher as: “School and library distribution by Silver Burdett”.
These reinforced bindings hold up very well, but, copies many times have markings from the School or library, lowering the value to collectors. The cloth bound series make a great display set and will last for a long time, if you can find all 28 books without any markings.
